When vitamins and minerals are added to wheat flour which is commonly eaten food become more nutritious. Consequently, consumers improve their health without changing their habits. The extra nutrition helps people move out of vicious cycle of micronutrient deficiencies which is so rampant among Indian populations. Food fortification adds micronutrients during wheat processing. This strategy can lead to relatively rapid improvements in the micronutrient status of a population. The cost is minimal especially if advantage can be taken of existing technology and local distribution networks. Since the benefits are potentially large, food fortification can be a very cost-effective public health intervention.
